THIS SUMMER, GRILLING GOES GREEN.
A chilled rice salad with crunchy organic veggies.
A grilled chicken breast marinated in one of our organic simmer sauces. A sweet, melty s'more, starring Seeds of Change chocolate. These are a few of our favorite summer things. But planet-positive grilling is about more than cooking with organic ingredients. By switching to a gas, electric or propane grill, you'll cook more cleanly and efficiently than with charcoal.
FISH TACOS (Serves 4)
1 lb. white fish (Chilean sea bass, halibut, catfish, tilapia)
2 Tbsp olive oil
Salt and pepper
Corn tortillas
1 Seeds of Change Arroz Hispaniola
3 Roma tomatoes, diced
1 avocado, sliced
Fresh squeezed lime
Fresh cilantro, chopped
PLANTING CHANGE, ONE HERB AT A TIME.
Back in April, we told you about the organic herb-growing contest we're holding among our associates. We're tickled 'green' about the progress, as many of us are using our homegrown herbs in our favorite summer dishes. Check out our delicious Fish Taco recipe, featuring Seeds of Change rice and the herb cilantro.
"Our basil's already being used in our salads and summer BLT's!" – E. Kane, Seeds of Change associate
DIRECTIONS
Place fish on foil lined pan. Brush fish with olive oil and season with salt and pepper. Place under broiler on high for 8-10 minutes. Heat Arroz Hispaniola for 90 seconds. Warm the tortillas in a dry skillet. Cut fish into smaller pieces, then onto 2 warmed tortillas. (Doubling tortillas will help hold it together!) Then add rice, tomatoes, avocado and squeeze of lime. Garnish heavily with fresh cilantro.
WE'RE OFF AND GROWING FOR ONE COMMUNITY!
Our organic community garden in Garden Grove, CA, is flourishing! This organic garden was started by the Hug-A-Tree Club from the Orange County High School for the Arts as their project C.A.R.E (Creating Awareness in the Restoration of the Environment). It will be used to provide environmental education for elementary schools close by. It will also be open to Senior Centers to offer a healthy environment and serve the residents freshly grown produce.
